I watched the video, but haven't tried making it, but one thing is for sure, amazingribs.com is legit, and has some great recipes. Their recipe for Tri-Tip and Pulled Pork is to die for. It's a favorite at our house. With that said, their recipe for smoked turkey was not that great. But overall, I would try anything they list considering the results I had.

Lava rocks. Even Alton Brown mentions them. Dad's first gas grill came wit ha large bag of lava rocks. Worked perfect. The fat would drip onto them and make flavor and flame and they would heat up much hotter than gas alone.
