I mean, from inside the game. Unlock a mission or an outfit or something. At least, I remember one of those GTA5 collection missions, that despite the huge timesink that it was, in the end it rewarded you with a car. It's just so much busywork though.
The only time I do something like that (gazillions of collectibles, done in a group) is when busywork sounds appealing. It's like doing dailies/farming in World of Warcraft - sometimes it's nice to put on a podcast or music, lean back, and just do something to keep your hands busy for a while. In that context, it's meditative, just like painting miniatures, or assembling (a model/Legos/Metal Earth/etc.) Doing it as gameplay, expecting it to be absorbing in and of itself, though? No thanks.

It's been my experience, that if the collecting itself gives rewards (like Black Flag chests, Fallout bobbleheads, etc), then there's
usually not something for collecting them all. If collecting the item doesn't give rewards (like GTA 5 action figures), then there's usually a reward at the end.
What doesn't kill me makes me stranger.
