Problems with Nvidia GeForce Experience video recording
I'm having trouble with my Nvidia GeForce Experience video recorder. Sometimes it works fine when recording a game, but sometimes it stops and saves as soon as I start recording. It seems to be related to when I use it more than once on the same game, even if I quit the game, go back to desktop and start the game again. Oddly, it works fine when I activate recording of the desktop. Anyone have any ideas on what is causing this? It is an intermittent problem and I haven't yet been able to say which games it has a problem with, it seems to be all games, but as I said, it doesn't occur all the time. Also, and this might just be a red herring, if I restart my computer it seems to resolve the problem with recording in a game, or at least it resolves it temporarily.

Which function are you using to record? There are two - plain recording, and the replay functionality that captures the last X minutes. The replay is always running in the background if it's enabled, but whenever you save it, it only saves back until X minutes - or until when it last started recording. If you play for ten minutes, save it, then wait ten seconds and save again, it'll look like what you said when you review it - turning on and then right back off, as it only has that ten seconds available.

I'm using plain recording. I've disabled the Instant Replay recording as it seems to be a performance hit on my games.

Are you using the on-screen display to show when you're recording.

Yes. I click to start recording, it says recording and then it stops recording and says the recording has been saved. The file is a few dozen kilobytes.

And I had my computer in sleep mode for a couple of hours, tried it again and this time no problems recording in the game. Weird...

I did some poking around. A lot of people with similar problems found that it was because they had some DRM-protected content (streaming service, Apple Music, etc.) and it was blocking recording.
I'd also look at free disk space.
