Which HOMM had the great opera music? I recently reloaded HOMM3 and to my surprise didn't find the opera stuf.

Google is my friend. It was HOMM2 and HOMM4 had some too.

I would bet you are thinking about HOMM4

IMO, the opera music in HoMM2 was better than the music in HoMM4. I remember when I played that game for the first time - I was blown away by the music for the different towns.
